  • 1 large onion

  • 1 tin chopped tomato

  • 1/2 tsp nutmeg

  • 150g cheese grated (or more to taste - cheddar/ gruyere / whatever takes your fancy!)

  • 500g minced lamb

  • 1 splash red wine

  • 1/2 cloves garlic

  • 3 aubergine

  • 2 potatoes large

  • 1 tbsp mixed herbs

  • 1 bechamel sauce

  1. Cut aubergines in half lengthways and brush with olive oil. Gently roast for 15 minutes in oven.
  2. Fry onion and garlic in olive oil until soft.
  3. Add the minced lamb and continue to fry until brown.
  4. Add can of chopped tomatoes, herbs, seasoning and grate some nutmeg (or use ground nutmeg) about 1/4 to 1/2 a teaspoon.
  5. Add a glug of red wine and let this bubble away for about 20 mins.
  6. Meanwhile make a savoury white sauce.
  7. Take aubergines out of the oven and on each place a layer of the meat sauce followed by a few slices of potato cover with the savoury white sauce and sprinkle with cheese. Return to oven to bake for about 15 minutes.
  8. Serve with greek salad and / or crusty bread.

Handy Hint

Make the savoury mince in advance and freeze. If you have no time to make a white or cheese sauce a carton of 4 cheese pasta sauce will do just fine.
