  • 170g self-raising flour sieved

  • 375ml milk (use lactose-free milk for non-dairy option)

  • 2 tsp vegetable oil

  1. Whisk the milk into the flour until smooth and pass through sieve to get rid of lumps. Add oil and mix together.
  2. Place in the fridge for 30 minutes.
  3. Add a ladle of batter to a greased frying pan and cook until brown on one side then flip over until brown on other side.
  4. Serve hot with sweet or savoury filling.

Handy Hint

If batter becomes too thick after refrigerating add a little more milk.

TBH, you don't need the milk or the oil. Simply use self raising flour and water. Same result - much cheaper and less faff! [smile]

At last, a great egg-free version which we all enjoyed. Thanks.

One DS has an egg allergy and my other DS is lactose intolerant so this recipe works really well for both. And they taste like regular pancakes, so we can all eat them. Enjoy.
