  • 1 medium onion finely chopped

  • 2 chicken breast diced

  • 1/2 tsp curry powder

  • 1/2 tsp turmeric

  • 1 tbsp plain yoghurt (to serve)

  • 150ml chicken or vegetable stock

  • 1 lemon

  • 1 clove garlic crushed

  • 200g tinned sliced mango in natural juice


  1. Heat oil and saute onion until soft.
  2. Add the garlic, curry powder and turmeric. Stir over gentle heat for 1 minute.
  3. Add diced chicken, stock and 1/2 juice from the mango slices.
  4. Add a squeeze of lemon juice. Stir until smooth and increase heat, simmer for 10 minutes.
  5. Cut up mango slices and gently heat in the microwave.
  6. To serve, swirl in some plain yogurt and top curry with heated mango slices.
  7. Eat with rice or a jacket potato.

    Yummy for me, and wolfed down by the toddler the next day too. Substituted apricots for mango as couldn't get any in their own juice.
