  • 2 medium onion

  • 1 tsp salt

  • 1 tsp black pepper

  • 2 tins chopped tomato

  • 250g lamb mince

  • 1 tsp paprika

  • 1 chicken stock cube

  • 1 handful coriander


  1. Finely chop the onions and mix with the lamb mince.
  2. Add the paprika and pepper to the mixture. When well-mixed roll little balls from the mixture.
  3. Place in a roasting tin and roast for 30 mins at 200 degrees. While the meat balls are roasting in the oven put the 2 tins of tomatoes in a saucepan and gently heat up with the stock cube. Once meatballs have a golden colour add to the tomato mixture and simmer for around 15 mins just so the mixture thickens up slightly. Serve with the fresh coriander and rice if you wish.

Handy Hint

Add any vegetables that you have left over to make it a healthier option.
