  • 1 lemon juiced

  • 6 tbsp extra virgin olive oil

  • 2 tsp ground cumin

  • 2 cloves garlic crushed

  • 800g tinned butterbeans


  1. Drain and rinse butter beans.
  2. Put in a food processor with 2 crushed cloves of garlic, 6 tbsp oil and 2 tsp cumin.
  3. Add juice of lemon and a good sprinkle of salt, then blitz until smooth-ish, but with the odd chunky bit. You may have to scrape down the sides a bit.
  4. Serve at room temp or warm as preferred.
  5. Good with tuna or lamb for meat/fish eaters.

Handy Hint

Use chickpeas in place of butter beans if that's what you've got in the cupboard.
