  • 50ml milk

  • 20g cheddar grated

  • 1 pinch smoked paprika (optional)

  • 1 eggs

  • 4 cherry tomatoes chopped

  • 3-4 stems of tenderstem broccoli


  1. Preheat your oven to 180C.
  2. Either line a muffin tin with paper cases (as many as you need for the quantity you are making) or use lightly greased silicone ones if you have them.
  3. Steam or boil the broccoli until tender, drain and chop into pieces, size depending on how your baby is doing with lumps.
  4. Share the chopped broccoli, cheddar and tomatoes out between the cases.
  5. Beat the egg(s) and milk together in a jug and mix in the paprika if using.
  6. Pour into cases and bake for 18-20 minutes until set and golden brown on top.
  7. Cool in cases/tin and unmold when your ready to eat.

Handy Hint

Great for picnics or lunch out and about as there's less mess. Great finger food if broken into lumps too.

Any filling works well from traditional spanish omelette, roasted red pepper and goats cheese and my favourite, leftover surprise, using whatever odds and sods you have in the fridge.
