Courgette and brie soup

  • 850ml vegetable stock

  • 300g courgette halved lengthways then sliced

  • 1/2 tsp dried thyme

  • 200g potatoes peeled and diced

  • 150g leeks halved lengthways then sliced

  • 135g brie rind removed then diced


  1. Put all the ingredients, except the Brie, into a large saucepan.
  2. Bring to the boil, cover and simmer for 12-15 minutes until the vegetables are tender.
  3. Add the brie and stir until the cheese melts. Do not overcook at this stage as it only takes 1-2 minutes or the cheese sticks to the bottom otherwise.
  4. Liquidise, season with black pepper and serve.

Handy Hint

This is a good winter warmer, made regularly in our house, really easy and takes less than half an hour so makes a good quick lunch. It's a Weight watchers recipe at 14 points per recipe or 3.5 points per serving. I leave out the leeks but include more courgettes instead. It's so easy you won't need the recipe as you don't need to get hung up on the quantities for it to work.
