Quick mixed leaf salad

  • 2 tbsp olive oil

  • 3 radishes chopped

  • 1 bag salad

  • 1 cucumber chopped

  • 1 bunch spring onions chopped

  • 1 handful walnuts crumbled

  • 1 handful feta crumbled

  • 1 tbsp lemon juice


  1. Tip the salad leaves into a big bowl or individual bowls.
  2. Add optional ingredients at this stage.
  3. Mix in the walnuts and cheese.
  4. Dress with oil and lemon juice and mix through.
  5. Eat with bread.

Handy Hint

This is very simple and very good. If you want to take it to work, take the dressing separately or the leaves will become soggy. Very fresh on a summer's day.
