  • 1 splash olive oil

  • 1 bag couscous

  • 1 bag spinach or marrow fat peas

  • 1 small salmon fillet

  • 1 drop lemon juice


  1. Boil the kettle.
  2. Put couscous in a little container with lid. Cover with boiling water. (The level of water should be just a bit higher than couscous.) Put lid on.
  3. Put salmon in microwavable container with lid.
  4. Put on a drizzle of olive oil, a few drops of lemon juice, salt and pepper. Put the lid on.
  5. Microwave according to size and power of micro wave. eg I put a small fillet 2.5 min in my 900W microwave.
  6. For a toddler portion, 2 min should be fine. The salmon need to stay moist.
  7. Microwave a portion of tinned spinach or marrow fat peas.
  8. Put salmon, couscous and spinach/peas on plate.

Handy Hint

you can put a bit of thyme on the salmon.

    This is so quick and easy, I loved it and it encouraged me to introduce my DS to couscous. I don't think you need the salt though - especially with yound children. A really fab idea though.

    Am always on the search for quick recipes as my youngest girls both go crazy for food as soon as I start cooking (they don't seem hungry before then, wierd!!). This is absolutely lovely and a great variation from white fish recipes, thanks.

    it's full of good things and it's really fast. i used to cook it in the morning before going to work and the childminder put it 1min in microwave for lunch. just reduce the cooking time of salmon in the morning. couscous is great as it looks after itself, put a bit of butter with it. greta mix of colour and texture. my daughter's favorite meal. i hope it all make sense. enjoy
