  • 85g butter or margarine

  • 85g caster sugar or soft light brown sugar

  • 3 drops vanilla essence

  • 1 pinch salt

  • 60g desiccated coconut optional

  • 170g wholemeal flour

  • 3-4 drops almond essence

  • 1 eggs

  • 85g almonds chopped

  • 85g chocolate chips optional


  1. Cream together fat and sugar. When light, beat in egg and add flavouring (if adding choc chips, coconut, almonds, almond essence or any other variation add now).
  2. Fold in flour and salt and add a little milk if too dry.
  3. Place resulting dough on a floured work surface and roll to about 1/4 inch thick.
  4. Cut out biscuits and place on a greased backing tray.
  5. Bake at 180C/Gas Mark 4 for 10-15 minutes and allow to cool.
  6. Can be iced if required.
