Easy spicy sweet potato and cherry tomato soup

  • 1 splash olive oil

  • 350g cherry tomatoes

  • 5-6 sweet potatoes cut into thirds

  • 1 tbsp fresh or dried thyme

  • 1 tbsp dried rosemary

  • 2 vegetable or chicken stock cubes

  • 1 tsp chilli (from a jar or tube, to taste)


  1. Preheat the oven to 200C and put the olive oil into the roasting tin. Place the roasting tin in the oven for 5 minutes.
  2. After time has elapsed, add the sweet potatoes.
  3. After about 30 minutes add the tomatoes, rosemary, chilli and thyme.
  4. After 20 minutes take out of the oven, and use a fork to take the skin off the sweet potatoes.
  5. Throw everything into a blender with 900ml chicken stock, and blend.
