Ham and courgette scones

  • 225g self-raising flour

  • 1 medium egg beaten with enough milk to make 100 ml (4 fl oz) liquid

  • 1 courgette coarsely grated

  • 1/2 tsp dried oregano

  • 50g margarine or butter

  • 50g wafer thin ham finely chopped


  1. Heat oven to 200C/Gas Mark 6. Have ready a baking tray.
  2. Mix flour and seasoning in a bowl, rub in margarine and stir in the oregano, ham and courgette.
  3. Stir in the egg and milk, reserving a little for brushing the tops, and mix to a soft dough. Knead lightly on a floured surface and pat out to a thickness of about 2 cm (1 inch) and cut out into 6.5 cm (2½ inch) rounds. Re-roll trimmings and cut more rounds.
  4. Brush the tops and reserved egg and milk liquid and bake for 10 minutes until risen and golden brown.

    Found these really hard to do as the dough was so sticky! But still really tasty

    Very popular, very tasty. Wouldn't say they were the quickest to make (the dough was very sticky and had to almost double the flour to do anything with it) but I'm hopeless in the kitchen so it was prob. me... But they are going in my tried and tested recipes file. Thank you

    really easy and tasty. Maybe add some cheese next time.
