  • 1 onion peeled

  • 5 tbsp honey (or enough to cover chicken)

  • 1 turkey

  • 2 tsp whole grain mustard

  • 500ml cider (strong and dry)

  • 1 carrot peeled

  • 1 apple cored


  1. Cut the onion, apple and carrot into chunks and chuck into a roasting tin.
  2. Wash turkey and remove any giblets, and cover in honey, mustard and salt and pepper. Place breast side down in the roasting pan.
  3. Pour cider around the turkey. Cover in tinfoil and cook in the oven at the temperature and time suggested on the turkey wrapper.
  4. Baste juices every half hour or so, always remembering to recover with the tinfoil so the turkey cooks in its own boozy tent.
  5. For the last half hour, turn breast side up covering with more honey and mustard. This will be a delicious moist beast.

The cider keeps it succulent without being overpowering. Enjoy and await the compliments!
