  • 3-4 tbsp vegetable oil

  • 2 eggs

  • 2.5kg potatoes

  • 2 large onions

  • 1 bag matzo meal

  1. Peel and grate the potatoes and onion and squeeze out some of the excess water. You may need to do this in batches.
  2. Add eggs, salt and pepper and enough matzoh meal until it reaches the right consistency - this is sort of hard to describe, it should still pour but not be too wet or thin.
  3. Put veg oil in a large baking tray and heat for 5-10 minutes.
  4. Pour mix into hot tray. Some oil will come up at the corners - use a spoon to spread the oil over the whole top of the kugel.
  5. Bake on high until crust sets then at Gas Mark 4 for 45 min.

Handy Hint

This is my Grandma's kugel recipe and I remember her standing in my kitchen every Pesach grating potato after potato by hand. Thanks to the wonders of modern technology however, I just bung it all in a food processor (sorry Grandma!). Add a few drops of lemon juice to the mix as you go to stop the potatoes turning pink

This is my recipe but I made it yesterday and i think unless you are cooking for 20 2.5kg of potatoes is too much. I suggest closer to 1.5kg but still 2 onions to give it flavour. This will make enough for about 12 people. It's a bit of a faf but came out great and everyone from my 7yo DD to my 88 yo grandma loved it.
