1 aubergine

1 ball mozzarella

500g passata
-
1 fresh herbs
Method
- Slice the aubergine and then fry and pat dry.
- Layer the aubergine and torn pieces of mozzarella into a dish and then pour over the passata and herbs.
- Bake in the oven for 20 minutes at 200°C. Serve.

Very easy and tasty. Added some pesto to the tomato sauce for more flavour and also added some washed uncooked spinach. Went down well.

If you have any in the cupboard already, a chopped red onion (fry at the same time as the aubergine) and a big spoon of red pesto in with the passata is yum. To be really flash, top with a mix of mozzarella, grated Parmesan, breadcrumbs

Just reading this recipe has made my mouth water so much. If only I could be bothered to go to the supermarket to get the ingredients!
