Sausage and potato casserole

  • 1 tbsp vegetable oil

  • 2 sticks celery chopped

  • 8 large cumberland sausages

  • 1 large waxy potato peeled and cut into chunks

  • 1 red eating apple quartered and chopped

  • 1 leeks sliced

  • 1 onions chopped

  • 1 tbsp plain flour

  • 300ml Somerset dry cider


  1. Preheat the oven to 190C/Gas Mark 5. Heat the oil and fry the sausages for 5 minutes. Using a slotted spoon transfer them to a casserole dish.
  2. Add the celery, onion, leek and potato to the oil and fry for 5 minutes. Stir in the flour and continue to cook for 1 minute.
  3. Gradually add the cider then pour over the sausages with the apple. Season to taste then cover and cook for 50 minutes.
  4. Serve on apple mash.
