  • 1 tsp bicarbonate of soda

  • 1 tsp vanilla extract

  • 200g caster sugar

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 250ml vegetable oil

  • 2 eggs

  • 275g plain flour

  • 500g apples peeled, cored and diced


  1. Grease and flour a 20cm x 30cm tin.
  2. Preheat the oven to 180C.
  3. Beat vegetable oil and eggs until foamy.
  4. Add sugar, flour, cinnamon, bicarb, salt and vanilla extract.
  5. Mix well. Stir in the apple.
  6. Bake for 30-40 minutes at 180C.

Handy Hint

Ground mixed spice is also lovely as well as cinnamon.

    Really moist cake with chunks of apple. Makes the house smell lovely when its cooking too!
