  • 250g self-raising flour

  • 60g icing sugar

  • 400g caster sugar

  • 1 tsp vanilla essence

  • 1/2 tsp salt

  • 85g cocoa powder

  • 125ml sunflower or corn oil

  • 4 free range eggs


  1. Mix together cocoa, caster sugar and oil in a bowl. Beat in eggs one at a time, then stir in the vanilla. Add flour and salt into the cocoa mixture. Cover dough, and chill for 4 hours.
  2. Preheat oven to 180C/Gas Mark 4. Line baking trays with greaseproof paper. Roll dough into small 2.5cm balls. Coat each ball in icing sugar before placing onto prepared trays.
  3. Bake in oven for 10-12 minutes. Transfer onto a wire rack and leave to cool.

Handy Hint

Leave the biscuit dough to chill so that it is not sticky.

    Mix was very sloppy, even after 5 hrs chilling. Odd texture - crispy but foamy and chewy, like thin sponge cakes.

    This biscuit recipe is so easy even kids can do it with a bit of help from mum. Children love baking and eating the biscuits afterward.
