Pea and mint soup

  • 1 onion peeled and chopped

  • 3/4 pints vegetable stock

  • 750g frozen peas

  • 2 tsp mint sauce


  1. Sweat the onion in a saucepan in a little oil for about 3 minutes.
  2. Add peas from frozen and slowly heat them with the onions until they are defrosted and warming up nicely.
  3. Add vegetable stock - stock cubes or vegetable bouillon are ideal - and simmer for 15 minutes.
  4. Blend soup with hand held blender. Then add seasoning, milk to taste and mint sauce.

Handy Hint

Serve immediately. If using soya milk this soup is best eaten the same day.

    This is a quick and easy vegetarian recipe. Great for family suppers. I am a new convert to vegetarianism and this has been a lifesaver on many occasions.
