Stuffed chicken burgers with oven roast wedges

  • 2 tbsp olive oil

  • 500g chicken breast minced in food processor

  • 1 lemon zested (1/2 tsp)

  • 200g maris piper potatoes

  • 2 tsp rosemary fresh; chopped

  • 3 cloves garlic minced

  • 125g mozzarella cut into small cubes

  • 3 tbsp chives chopped


  1. For the potato wedges, cut the potatoes into evenly sized wedges, toss in olive oil and season with salt and pepper. Bake in the oven for 35 minutes at 180C for fan assisted ovens.
  2. For the burgers, using your hands, combine a large bowl the minced chicken, chives, rosemary, garlic, lemon zest and pepper. Shape into 8 patties. Divide cheese among half of the patties. Top with remaining patties and press gently to seal and enclose the cheese.
  3. Fry the burgers in 1 tsp of olive oil and then place in the oven for 12 minutes at 180C for fan assisted ovens.
