Tomato and basil soup

  • 1 vegetable stock cube

  • 1 onion chopped

  • 1 tsp oil (sunflower or olive oil)

  • 1 clove garlic chopped

  • 1 tin plum tomatoes chopped

  • 4 fresh tomatos chopped

  • 1 handful basil

  • 1 pint hot water


  1. Heat oil in pan.
  2. Add onions and garlic, fry for 2 minutes.
  3. Add plum and fresh tomatoes and dissolve the stock cube in 1 pint of hot water in a jug, pour it in the pan with the tomatoes.
  4. Simmer for 15 minutes.
  5. Tear basil into soup.
  6. Simmer for 30-45 minutes on low heat.
  7. Blend with a hand blender and season to taste.

Handy Hint

I prefer to use Knorr as it has less salt than an OXO cube.
Serve with crusty bread
