Ketchup spaghetti

  • 1 onion

  • 300g spaghetti

  • 1 tin chopped tomato

  • 1 courgette

  • 1 handful mixed herbs (to taste)

  • 1 splash balsamic vinegar

  • 1 tsp tomato ketchup


  1. Fry the finely chopped onion in some olive oil until soft.
  2. Add a finely chopped courgette (peel if your toddler wont eat green bits!), and cook for 5 minutes.
  3. Add the rest of the ingredients and simmer for 10 minutes.
  4. Blend to smooth consistency then serve with spaghetti.

Handy Hint

Chop up the spaghetti small and mix it in to the sauce (it looks like tinned spaghetti) then freeze toddler sized portions which provide a very quick future meal!
