Chicken and pepper parcels

  • 1 splash olive oil

  • 4 chicken breast

  • 1 handful fresh parsley chopped, optional

  • 2 peppers sliced

  • 12 button mushrooms


  1. Pre-heat oven to 200C.
  2. Lay each chicken breast on a piece of foil large enough to make a parcel.
  3. Cover with sliced peppers. Lay three mushrooms, stalk side down, on top. Drizzle a small amount of olive oil over the mushrooms. Sprinkle with parsley if desired.
  4. Fold the foil to make an airtight but loose parcel.
  5. Place on a baking sheet and bake for about 30 minutes depending on thickness of chicken breasts.

Handy Hint

Endless variation possible using different vegetables, soy sauce, hoi sin sauce, etc.
