Celeriac soup

  • 1/2 cayenne pepper diced

  • 500ml stock

  • 1 block butter


  1. Put a generous blob of butter in pan and melt gently.
  2. Add the celeriac and sauté very gently. You don't want to colour the celeriac or burn the butter so heat on low.
  3. Add the stock and gently simmer until tender. Add more butter.
  4. Mix in a blender or use a hand blender.
  5. Season to taste and eat.
