Ingredients

1/2 cayenne pepper diced

500ml stock

1 block butter
Method
- Put a generous blob of butter in pan and melt gently.
- Add the celeriac and sauté very gently. You don't want to colour the celeriac or burn the butter so heat on low.
- Add the stock and gently simmer until tender. Add more butter.
- Mix in a blender or use a hand blender.
- Season to taste and eat.
