  • 1/4 tsp bicarbonate of soda

  • 1/2 tsp vanilla extract

  • 1 large egg

  • 115g unsalted butter softened

  • 70g light muscovado sugar

  • 2 handfuls marshmallows

  • 50g granulated sugar

  • 160g plain flour

  • 4 tbsp nutella heaped


  1. Preheat the oven to 180C/160C fan/Gas Mark 4. Put the butter and sugars into a large bowl and cream together until pale and fluffy. Gradually beat in the vanilla and egg.
  2. In a small bowl, mix the flour, bicarbonate of soda and a good pinch of salt, then add to the creamed mixture, along with the nutella and marshmallows. Mix.
  3. Put tablespoonfuls of the dough onto baking sheets and bake for 10 minutes.
  4. Place on a wire rack and cool.

    Phwoar! So quick and easy. Didn't have any marshmallows for the first try but it didn't seem to matter.
