Easy pea soup

  • 1 vegetable stock cube

  • 1/2 onion chopped

  • 1 tbsp olive oil

  • 2 sticks celery chopped

  • 2 carrot chopped

  • 500g frozen peas


  1. Heat up the olive oil in a medium sized pan over a medium heat.
  2. Add the onion and cook for a couple of minutes
  3. Add the celery and carrot and cook for about 10 minutes.
  4. Add the frozen peas and cook for about 4-5 minutes.
  5. Pour in about 500ml vegetable stock and simmer for 10-15 minutes.
  6. Liquidise the lot and add salt and pepper to taste.

Handy Hint

Depending on how thick you like your soup, drain off some of the liquid before liquidising, then you can always add more of it if it's too thick.

    I made this last week when I was looking for a bean soup recipe, but this looked good. It turned out to be very tasty and incredibly easy, so much so that I made it for lunch in very limited time and it was all gone in ten minutes.

    Pea soup doesn't really sound very inspiring, but it's really really tasty and so easy to make. A really healthy timesaver.
