  • 225g self-raising flour

  • 55ml olive oil

  • 175ml milk

  • 100g cheddar grated

  • 1 eggs

  • 6-8 cherry tomatoes chopped

  • 1 carrot grated

  • 3-4 broccoli florets steamed


  1. Preheat the oven to 200C/180C fan.
  2. Mix veg with cheese and flour.
  3. Add wet ingredients and mix to a lumpy batter.
  4. Spoon mixture into muffin cases.
  5. Cook for 20 minutes (or until brown on top).

Handy Hint

You can use any veg - just make sure they are similar quantities to those described above.

    Tried these this evening and they're excellent. my scales are broken so i ended up guessing with the flour but they've turned out great. My 9 month old gnawed on one after tea and he loved it.

    These were a great way to get veg into my fussy toddler at snack times. I usually make a batch and keep them in the freezer until needed. You can either defrost them in the microwave or just let them defrost on their own (handy to stick frozen in picnic lunch or as snack for day out as will have defrosted by the time you need them).
