  • 250g self-raising flour

  • 125g butter

  • 100g caster sugar

  • 1 tsp baking powder

  • 3 eggs beaten

  • 4 banana mashed


  1. Preheat oven to 180C/Gas Mark 4. Line or grease a 1lb loaf tin.
  2. In a bowl, add baking powder to flour. Add butter and rub in to make breadcrumbs.
  3. In a separate bowl beat eggs and in a third bowl mash bananas. Add eggs, banana and caster sugar to breadcrumbs and mix together.
  4. Pour into loaf tin and cook for 50-60 minutes.

Handy Hint

Use bananas that are over-ripe.

    I added chopped dates and walnuts. Really yummy! Very easy to make.

    Absolutely lovely - I chose it because it used up the most bananas (I had 5, most ask for 2 at most) - the result was a great textured cake and very moist. Very easy recipe so the kids can help too.
