Raspberry drumsticks or princess chicken

  • 1 tsp red wine vinegar

  • 1/2 tsp mustard

  • 2 tbsp soy sauce

  • 1 clove garlic (crushed, or a spoonful of the pre-chopped cheat stuff)

  • 4 tbsp raspberry jam

  • 6 chicken legs

  • 1 splash water


  1. Tip all of the liquid ingredients into a small saucepan and bring to the boil. Remove from heat and leave to cool – it should reduce slightly into a nice sticky sauce.
  2. Get a large zip-closure plastic bag and add the cool sauce to it. Clean the drumsticks, removing the skin, and marinate in the sauce for at least 2 hours.
  3. Line a baking sheet with aluminium foil and brush with oil. Tip the chicken onto the pan and bake in a pre-heated 200°C oven (little less for fan-assisted) for at least 45 minutes, turning after 20 minutes.

Nom nom nom! You could rebrand this according to your family – 'Princess Chicken', 'Pink Chick', etc.

    I really love this recipe and so does everyone who eats it. My toddler son tried this when he was around a year old and he absolutely loved it. Plus you can tailor it to suit your family's taste preferences.
