Cheddar, chive and potato pancakes

  • 30g butter melted

  • 2 egg yolk beaten

  • 125ml milk

  • 55g cheddar mature, grated

  • 170g potato grated

  • 1/2 tsp sea salt

  • 2 egg whites

  • 200g plain flour

  • 1 handful fresh chives chopped


  1. Whisk the salt into the beaten egg yolks and add the milk. Sift the flour and add it slowly to the mixture with the melted butter. Mix well before adding the grated potato, cheese and chives. Fold in the stiffly beaten egg whites.
  2. Put a tablespoon of batter at a time into a bit of smoking butter in the pan, and turn over when bubbles begin to break on the surface.
  3. You can cook several pancakes at once, depending on the size of the pan. But don’t cook them too close to each other.
  4. Cook until the top and bottom of each pancake is golden brown.

Handy Hint

Heap them up and serve with butter or apple sauce.

    These are nice! I was short on time so didn't get to sieve the flour and only had self-raising flour instead of plain flour and I ended up preparing the batch but not getting to cook it for around 3 hours but they still came out nice enough (especially as I don't really cook pancakes so am not used to cooking mixtures on a pan!)
