Tomato and pesto tart

  • Several large tomatoes cut into slices

  • 8oz pesto

  • 1 ready-made puff pastry

  • 1 ball buffalo mozzarella cut into chunks


  1. Take a sheet of puff pastry and score round the edges.
  2. Smother pesto over the base, then top with slices of tomato and chunks of mozzarella.
  3. Bake in a pre-heated oven at around 180C until the pastry is risen and golden. This will take about 20 minutes, but check regularly.
  4. Serve with crisp salad.

Handy Hint

If you have time try making your own pesto using pine nuts, parmesan cheese, basil, olive oil, garlic and lemon juice. It really makes a difference to the flavours.
