  • 227g self-raising flour

  • 284ml milk

  • 227g sugar (any you like: white, brown, or caster)

  • 1 eggs

  • 227g dried mixed fruit

  • 2 Weetabix


  1. Put the weetabix, dried fruit and sugar in a bowl and pour the milk on top.
  2. Leave to soak for several hours, or overnight.
  3. Add the egg and the flour.
  4. Mix all the ingredients together.
  5. Put the mixture into a 2lb loaf tin, and cook till done (usually 1.5 hours at about 170C/Gas Mark 3).

    I love this recipe, can do it with my eyes shut (almost). I like doing the soaking overnight, cos you can put it on early in the morning, and have a cake ready by mid-morning. Kiddies can help with the measuring and mixing, and of course - the eating. And you're getting breakfast cereal into them, in cake form!
