  • 235ml milk

  • 20g baking powder

  • 50g sugar

  • 2 eggs

  • 125g all-purpose flour

  • 50g margarine

  • 140g cornflour


  1. In a bowl, mix flour, cornmeal, sugar, baking powder and salt.
  2. Add the milk, eggs and margarine; beat for one minute.
  3. Pour into a greased, nine-inch-square baking tin.
  4. Bake at 220C for 20-25 minutes, or until bread is golden brown and a knife comes out clean.

Handy Hint

Add chopped chillies or sweetcorn to the mixture before baking, if you like.
