Caribbean spinach

  • 1 medium onion

  • 1 tin spinach

  • 1 tbsp vegetable oil

  • 3 cloves garlic

  • 1 tin chopped tomato

  • 1 pinch dry thyme

  • 0.5 green bell pepper (optional)

  • 1 splash Caribbean hot pepper sauce


  1. Heat the oil, and fry onion gently until golden.
  2. Crush garlic and add to pan with bell pepper chopped into smallish pieces. Fry on medium heat for a few minutes.
  3. Add a pinch of thyme and the spinach and tomatoes.
  4. Add a splash of hot pepper sauce and salt or vegetable stock.
  5. Serve with brown rice and fried plaintain.

Handy Hint

For a fishy version, add prawns.

    Very quick and easy and with the splash of hot pepper sauce and plaintain on the side really gives it the caribbean flavour. Healthy too and cheap.
