  • 1 pinch salt and pepper (to taste)

  • 140g self-raising flour

  • 1 tbsp milk (to glaze)

  • 50g mild goat's cheese

  • 1 tbsp semi-skimmed milk

  • 65g margarine

  • 2 tbsp shallots chopped and very finely grated

  1. Cream the margarine, Camembert and goat's cheese together. Beat in the onion, salt and pepper.
  2. Beat in half the flour, then work in the rest with enough milk to make a dough. Knead lightly until smooth.
  3. Roll out to 3cm thickness and cut into rounds with a 3 inch plain cutter. Brush with milk.
  4. Fold over in half to form a semi-circle. Brush with milk and make a small hole at the top.
  5. In a preheated oven at 190C/Gas Mark 6, bake for 18-20 minutes until golden brown. Cool on a wire rack. Serve warm or cold with salad.

Handy Hint
