  • 2 tbsp olive oil

  • 2 cloves garlic unpeeled

  • 1lb new potatoes


  1. Put the potatoes with the garlic cloves in a pan of cold water and bring to the boil.

  2. Simmer about 15 mins until potatoes are tender.

  3. Drain and then put back in the pan and add the olive oil,salt,pepper and the garlic (skin now removed.

  4. Crush the potatoes into small pieces (don't mash) by pressing gently with a potato masher a few times.

4.Stir together and serve.
