Sweet pepper and tomato pasta sauce

  • 1 onion peeled and chopped

  • 1 tin chopped tomato

  • 1 clove garlic peeled and chopped

  • 1 sweet red pepper de-seeded and sliced into match-sticks

  • 1 handful fresh basil torn


  1. Fry onion and peppers on a low heat until soft - the softer the better with the pepper.
  2. When soft add crushed garlic, basil and tomatoes and simmer on a low heat until sauce has reduced to a nice thick consistency.

Handy Hint

1/2 a tsp sugar is supposed to reduce acidity. Simply double amounts to make more sauce.
