  • 100g butter softened

  • 25g icing sugar

  • 50g desiccated coconut

  • 25g cornflour

  • 75g plain flour


  1. Mix butter with cornflour, plain flour and icing sugar and form into small balls.
  2. Roll each one in coconut.
  3. Place well apart on a lined baking sheet and press down lightly with the back of a fork.
  4. Bake at 180C for 15-20 minutes until golden.
