  • 4 vegetable stock cube

  • 1 bunch parsley

  • 2 celery stick

  • 10 slices bacon

  • 500g potatoes

  • 12 sausages

  • 3 carrot

  • 3 sprigs thyme


  1. Peel and chop potatoes, carrots, celery, bacon, thyme and parsley.
  2. Brown sausages briefly in a frying pan.
  3. Place all the ingredients in a large saucepan and cover with hot water.
  4. Dissolve and add the stock cubes.
  5. Bring to the boil and then simmer until everything is cooked (usually an hour).

    I thought 4 stock cubes sounds like a lot? And agree pic doesn't seem to quite match up. Still, sounds tasty. I'm hoping to do some kind of veggie Irish stew tonight with some dumpling mix I have in cupboard and plenty of new tatties and carrots. Definitely stew night I reckon :-)

    This can not be the photo of this dish - obviously meat not sausages in the photo and also shows bell pepper (capsicum) which is not an ingredient!?! Still sounds like a winner, and I will be making it tonight!

    This was absolutely delicious. We love our one pots here and this did not disappoint. I added a couple more potatoes at the end for texture (and for DH who LOVES potatoes!) Definitely recommend this.

    Easy to make, a good meal that the whole family will enjoy.
