Easy banana bread with dried fruit

  • 225g self-raising flour

  • 110g butter

  • 140g caster sugar

  • 1/2 tsp salt

  • 175g mixed dried fruit

  • 2 medium eggs

  • 450g ripe bananas peeled


  1. Grease a 2lb loaf tin with butter or margarine.
  2. Mash the bananas with a fork.
  3. Pre-heat the oven to 170C. Pour all the ingredients (except the dried fruit) into a mixing bowl and combine together.
  4. Add the dried fruit and mix well until it is distributed evenly.
  5. Pour the mixture into the greased bread tin and place in the centre of the oven. Don't open the oven for the next 45 minutes.
  6. After 45-50 minutes of cooking, test the bread to see if it's cooked. The moisture level in the bananas can vary considerably and affect the cooking time.
  7. Test by inserting a skewer into the middle of the bread. If it comes out clean the bread is cooked. If it has wet bread stuck to it, cook for a further ten minutes and test again.

    This is a great lunch box recipe that uses up those ripe bananas that the kids wont eat!
