Curried cauliflower soup

  • 1 tbsp curry powder

  • 1 leek

  • 1l vegetable or chicken stock

  • 1kg frozen cauliflower


  1. Fry the leek in a little oil and butter until it is soft. Add curry powder and fry for 30 seconds.
  2. Add the stock and cauliflower and cook until the cauliflower is softened.
  3. Blitz in a blender or with one of those brilliant hand held ones.
  4. Serve with a swirl of cream and some sprigs of fresh coriander

    Bloody delicious! Somehow I made sludge not soup but it was still amazing. Really easy to make. Yum, yum, yum!

    Really nice, I added some light cream and seasoned with some red and black pepper. Will be making this again!
