Ingredients

  • 1 tbsp tomato puree

  • 1/2 tsp turmeric

  • 1 tin chopped tomato

  • 1 pinch cayenne pepper

  • 1/2 tsp cumin

  • 2 cloves garlic

  • 1 handful fresh coriander

  • 2 tsp coriander

  • 2 tins chickpeas

  • 1 onions

  • 200g roasted peppers from a jar or can

Method

  1. Chop the onion and cook until lightly browned (5 minutes). Add crushed garlic and spices and cook for 2 minutes.
  2. Stir in the tomatoes and tomato purée, red peppers and chickpeas.
  3. Roughly chop the fresh coriander and add half.
  4. Season and simmer with lid off for 15 minutes. It shouldn't be very wet so if it is, at the end of the 15 minutes, turn up the heat and boil until it thickens.

Handy Hint

Serve with raita; plain yogurt with diced cucumber, squeeze of lemon, garlic and a pinch of cumin.
