Christmas custard pie

  • 1 tsp vanilla extract

  • 500g shortcrust pastry ready made, one pack - you could make your own, but this is supposed to be quick

  • 4 eggs

  • 1 pint full-fat milk or cream, of any sort, the fatter the cream, the richer the custard

  • 1 tbsp brown sugar

  • 0.5 jars mincemeat use more if you wish


  1. Heat oven to 170C.
  2. Beat eggs, sugar and vanilla well together. Add the milk (or milk-and-cream) and mix in well. Add the mincemeat and mix well.
  3. Grease pie/flan/quiche dish and line with pastry. Pour mixture in.
  4. Bake in centre of oven for about 45 minutes or until the custard is firm and a skewer comes out clean.

Handy Hint

If you use a metal dish, then put a baking tray in the oven to warm when you preheat, and place the dish on the hot tray. Otherwise, if you use a china dish, you will have to bake the pastry case blind before adding the filling.
