450g self-raising flour
225g brown sugar
835g mixed fruit
1 large eggs (lightly beaten with 1 tbsp of milk)
275ml strong tea (black)
- Add the fruit and the sugar to the tea and leave it to soak overnight.
- Pre-heat the oven to 170C.
- Add the egg to the mixture and sift in the flour. Mix thoroughly.
- Divide the mixture between two greased loaf tins and bake for between 1 1/4 and 1 1/2 hours, or until a knife comes out clean when inserted into the centre.
A dash of whiskey added to the soaking fruit adds a lovely flavour.
