  • 450g self-raising flour

  • 225g brown sugar

  • 835g mixed fruit

  • 1 large eggs (lightly beaten with 1 tbsp of milk)

  • 275ml strong tea (black)


  1. Add the fruit and the sugar to the tea and leave it to soak overnight.
  2. Pre-heat the oven to 170C.
  3. Add the egg to the mixture and sift in the flour. Mix thoroughly.
  4. Divide the mixture between two greased loaf tins and bake for between 1 1/4 and 1 1/2 hours, or until a knife comes out clean when inserted into the centre.

Handy Hint

A dash of whiskey added to the soaking fruit adds a lovely flavour.

    I add a teaspoon of Mixed Spice, and just use sultanas because of picky DCs. Plus, *always* serve buttered.
