  • 1/2 tsp baking powder

  • 1/8 tsp salt

  • 1/2 tsp ground cinnamon

  • 70g crunchy peanut butter

  • 170g muesli

  • 1 eggs

  • 55g walnuts chopped

  • 100g light brown soft sugar

  • 115g butter or margarine, at room temperature (preferably unsalted)

  • 55g plain flour

  • 55g raisins


  1. Preheat oven to 180C/Gas Mark 4. Grease a baking sheet.
  2. With an electric mixer, cream the butter or margarine and sugar until light and fluffy. Beat in the peanut butter. Beat in the egg.
  3. Sift the flour, baking powder, cinnamon and salt over the peanut butter mixture and stir to blend. Stir in the muesli, raisins and walnuts. Taste the mixture to see if it needs more sugar, as muesli varies.
  4. Drop rounded tablespoonfuls of the mixture onto the prepared baking sheet about 2.5cm apart. Press gently with the back of a spoon to spread each mound into a circle.
  5. Bake until lightly coloured, about 15 minutes. With a metal spatula, transfer to a rack to cool. Store in an airtight container.

Great to add one to a packed lunch.
