Pasta with quorn and broccoli

  • 15ml olive oil

  • 400g chopped tomato

  • 1 small head of broccoli steamed

  • 2 cloves garlic

  • 150g quorn pieces

  • 225g dried pasta

  • 1 pinch of basil


  1. Bring a large pan of water to the boil and add the pasta. Cook for 10 or 15 minutes.
  2. Puree the tomatoes with the garlic, pour into a pan, add the basil and heat.
  3. When hot, add the quorn and simmer for 5 minutes.
  4. Drain the pasta and add the tomatoes with the Quorn, broccoli, olive oil and seasoning. Stir and serve.

    I do this too but fry a chopped onion and some mushrooms too, add them to the mix, plus a handful of sweetcorn. Handful of grated cheese on top too!

    This is a tasty nutritious balanced meal that is economical & quick to preapre. It is rich in protein, fibre, vitamins, minerals & antioxidants. A gluten free version can be made with gluten free pasta. Variation - use 1 finely chopped leek instead of the broccoli - equally delicious!
