  • 4 tomatoes roughly chopped

  • 2 pinches oregano or basil

  • 500g polenta ready-made

  • 1 handful Parmesan or other appropriate grating cheese

  • 2 handfuls mushrooms or any vegetable you'd like, roughly chopped


  1. Slice the polenta into 12 1cm slices.
  2. Place on a baking tray in 4 pizza base-type, slightly overlapping piles i.e: 3 slices per pizza.
  3. Cover with a drizzle of oil, some cheese, mushrooms, tomatoes or other vegetables and top off with grated cheese.
  4. Bang into a 190-200C oven for 30 minutes.
