Pork, cider and butter bean casserole

  • 1 tbsp olive oil

  • 2 tsp cream cheese

  • 235ml vegetable stock

  • 1 large onion chopped

  • 1 tsp mustard

  • 330ml cider good-quality

  • 400g tin butter beans

  • 2 cloves garlic

  • 1 tbsp dried mixed herbs

  • 300g pork diced

  • 2 carrot chopped


  1. Brown the pork in the olive oil, in an ovenproof dish.
  2. Add the onion and the herbs and heat gently to sweat the onions.
  3. Add the garlic, chopped carrots and the cider.
  4. Turn heat up to a high simmer until the cider has reduced.
  5. Add the stock, stir well and transfer to the oven 180C.
  6. Cook for 1 hr then add the butter beans and cream cheese.
  7. Return to the oven for 30 minutes.
  8. Casserole should be thick and creamy, add seasoning if your taste requires it. Enjoy!

Handy Hint

Add a little water if the casserole is drying out at the stage you add the beans and cheese.

    I don't have a lot of time and this is really quick to prepare and tasty served with rice, potato or pasta. It's quite filling on its own too. My children (who are fussy about veg) will eat the meat and I blend the veg & sauce together for them and just spoon it over the top.
