Butternut squash ravioli

  • 1/2 egg yolk

  • 100g butternut squash

  • 40g ricotta

  • 12g Parmesan

  • 1/2 tsp sachet of fajita seasoning


  1. Make the filling. Steam the butternut squash in a steamer for 10-12 minutes until soft. Leave to cool and mash the squash in a bowl using a fork. Add the remaining ingredients and season with salt and pepper.
  2. Make ravioli squares, add the butternut squash and cook in boiling salted water for 4 minutes.
  3. Drain the ravioli and serve.
