  • 1 clove garlic peeled and crushed

  • 100g prawns

  • 500g papardelle pasta

  • 80g pitted green olives

  • 2 spring onions

  • 8 sun-dried tomatoes

  • 1 Parmesan (to taste)


  1. Cook the papardelle pasta according to pack instructions, and when done mix through a glug of olive oil.
  2. Saute garlic in a glug of olive oil.
  3. Add prawns, stir for 30 seconds, then add the pasta.
  4. Stir well, then add tomatoes and olives
  5. Chop spring onions, add to the pasta.
  6. Serve sprinkled with parmesan
